Ingredients:


For The dough:



  1. Wheat flour- 3 cups

  2. Ajwain- 1 tsp

  3. Ghee- 1 tbsp

  4. Salt- 1 tsp

  5. Water according to need


For Stuffing:



  1. Cauliflower or gobhi(medium)

  2. Cumin seeds- 1 tsp

  3. Chopped onion- 1

  4. Chopped green chillies- 2-3

  5. Ginger(grated)- 1 tsp

  6. Butter/Vegetable oil- 2 tbs

  7. Coriander powder- 1 tsp

  8. Turmeric(optional)- ½ tsp

  9. Chopped coriander leaves- 2 tbsp

  10. Enough oil for baking parathas

  11. Salt to taste


Method:



  1. Take flour in a vessel and add ghee, salt, ajwain and enough water.

  2. Mix well to make a soft dough and keep aside for 30 minutes.

  3. You can also add some milk in dough to make soft and white parathas.

  4. Wash cauliflower cleanly and grated by grinder.

  5. For stuffing heat oil in a sauce pan and add cumin seeds for spluttering.

  6. Now add chopped onion, ginger and green chillies and fry until brown.

  7. After that add turmeric, coriander powder, cauliflower and chopped coriander.

  8. Stir it and cook for 5 minutes on low flame.

  9. Make small balls of dough and roll them finely using flour.

  10. Spread stuff on round disc and cover it with other disc.

  11. Seal the edges if it difficult use some water as glue.

  12. Place a non stick pan at medium flame and put the disc on it.

  13. Oil both sides of the paratha and bake till golden brown.

  14. Serve hot with chutney or pickle.
