Ingredients:



  1. Butter- 2 tbsp

  2. Water- 8 cups

  3. Chopped potatoes- 2

  4. Diced carrots- 3-4

  5. Chopped tomato- 1

  6. Chopped celery- ½ cup

  7. Green peas- ½ cup

  8. Chopped turnip- 1

  9. Mint leaves- 5-6

  10. Ginger-garlic paste- ½ tsp

  11. Black pepper powder and salt to taste

  12. Crushed cabbage and cream for garnishing


Method:



  1. Take 8 cups of water in a pressure cooker and bring to boil.

  2. Add all the chopped vegetables into the pressure cooker.

  3. Cook the vegetables for 15 minutes or until they become soft.

  4. Allow to cool and blend in a mixer.

  5. Strain the vegetable soup and keep aside.

  6. Now heat butter in a pan, add ginger-garlic paste.

  7. Pour the vegetable soup and mint leaves, stir well.

  8. Sprinkle salt and pepper powder, cook for 4-5 minutes.

  9. Garnish with crushed cabbage and fresh cream.

  10. Vegetable soup is ready to serve
