Ingredients:
- Butter- 2 tbsp
- Water- 8 cups
- Chopped potatoes- 2
- Diced carrots- 3-4
- Chopped tomato- 1
- Chopped celery- ½ cup
- Green peas- ½ cup
- Chopped turnip- 1
- Mint leaves- 5-6
- Ginger-garlic paste- ½ tsp
- Black pepper powder and salt to taste
- Crushed cabbage and cream for garnishing
Method:
- Take 8 cups of water in a pressure cooker and bring to boil.
- Add all the chopped vegetables into the pressure cooker.
- Cook the vegetables for 15 minutes or until they become soft.
- Allow to cool and blend in a mixer.
- Strain the vegetable soup and keep aside.
- Now heat butter in a pan, add ginger-garlic paste.
- Pour the vegetable soup and mint leaves, stir well.
- Sprinkle salt and pepper powder, cook for 4-5 minutes.
- Garnish with crushed cabbage and fresh cream.
- Vegetable soup is ready to serve
